The ingredient of Rack Of Lamb
- 4 racks of lamb 3 cutlets in each
- 1 2 cup tomato sauce
- 2 tablespoons brown sugar
- 2 tablespoons brown vinegar
- 2 tablespoons bottled mint jelly
- 1 2 cup water
The Instruction of rack of lamb
- preheat oven to 200c 180c fan forced
- put lamb in a baking dish and bake for 15 minutes
- combine remaining ingredients in a saucepan and bring to the boil
- remove from heat and pour over lamb
- reduce heat to 180c 160 fan forced and bake a further 40 to 45 minutes or until meat is tender basting frequently with sauce
- serve sauce separately
