Spicy Beef And Pumpkin Pie Filling


This hearty winter warmer has tender beef, pumpkin and spices to create a wholesome family meal. Use for a pie filling, serve with rice or freeze for another time.

  • 1 tablespoon olive oil
  • 1 4 cup 35g plain flour
  • 600g coles australian no added hormones gravy beef cut into 2cm pieces
  • 1 red onion cut into wedges
  • 2 garlic cloves crushed
  • 2 teaspoons ground paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground turmeric
  • 1 2 teaspoon ground ginger
  • 2 cups 500ml chicken stock
  • 400g can chickpeas rinsed drained
  • 500g butternut pumpkin peeled seeded cut into 2cm pieces
  • 1 small orange sweet potato peeled cut into 2cm pieces
  • 1 4 cup coarsely chopped coriander

  • preheat oven to 140u00b0c heat the oil in a large flameproof casserole pan over medium heat place the flour in a large bowl and season well add beef and toss to combine cook beef in 3 batches turning for 4 mins or until brown all over transfer to a bowl
  • cook onion in pan stirring for 5 mins or until soft add garlic paprika cumin ground coriander cinnamon turmeric and ginger cook stirring for 1 min or until aromatic return beef to pan and add stock bring to the boil
  • cover and bake stirring occasionally for 1u00bd hours or until beef is very tender add chickpeas pumpkin and sweet potato bake covered for 30 mins or until sweet potato is tender stir in chopped coriander season set aside to cool freeze pie filling in airtight containers for up to 3 months if desired
