- 2 cups 300g plain flour
- 100ml olive oil
- 1 onion finely chopped
- 500g minced lamb
- 1 2 teaspoon ground allspice
- 2 teaspoons ground cumin
- 1 3 cup 80g tomato paste
- 1 tablespoon red wine vinegar
- 2 cloves garlic
- 4 400g zucchini cut into 3mm thick slices
- greek style yoghurt to serve
- toasted pine nuts to serve
- coriander leaves to serve

- place flour and 1 teaspoon salt in a bowl make a well in the centre then pour in 3 4 cup hot water and 1 tablespoon oil stir until a dough forms knead in bowl until just smooth form into a ball then wrap in plastic wrap stand at room temperature for 1 hour
- meanwhile heat 2 tablespoons oil in a frying pan over medium heat cook onion stirring for 5 minutes add lamb and cook stirring for 3 minutes or until browned add allspice 1 teaspoon cumin 2 tablespoons tomato paste and 2 tablespoons water cook stirring for 2 minutes season to taste with salt and pepper cool
- preheat oven to 230c combine vinegar and garlic with remaining oil cumin and tomato paste then season to taste add zucchini and toss to coat
- place a heavy based oven tray on lowest shelf in oven heat for 10 minutes divide dough into 4 working with 2 pieces roll each out on a lightly floured surface until 12 x 30cm remove tray from oven and immediately place rolled dough on tray top each with 1 4 mince mixture and 1 4 zucchini slices bake for 10 minutes or until crisp repeat with remaining ingredients top with yoghurt pine nuts and coriander serve warm
