The ingredient of Quick Bread Samosas

  • 40ml 2 tablespoons vegetable oil plus extra to fry
  • 1 small onion finely chopped
  • 2 garlic cloves chopped
  • 1 small red chilli seeded finely chopped
  • 350g potatoes peeled diced boiled
  • 50g frozen peas thawed
  • 2 teaspoons mild curry powder
  • 2 tablespoons chopped fresh coriander
  • 8 large slices white bread crusts removed
  • mango chutney to serve
  • raita to serve
  • salad to serve

The Instruction of quick bread samosas

  • heat the vegetable oil in a large frying pan over medium heat add the onion garlic and chilli and cook for 2 minutes add the potato peas and curry powder and cook for a further 1 2 minutes mashing together to combine remove from the heat season with salt and pepper and stir in the coriander
  • use a rolling pin to flatten each slice of bread divide the filling evenly and place in the centre of each piece of bread brush the edges with a little water then fold over corner to corner pressing the edges to form a seal
  • heat the oil in a deep frying pan over high heat add the samosas and fry until golden on both sides serve with mango chutney raita and a salad
