- combine lemon rind and juice 2 tablespoons olive oil garlic and piri piri in a small bowl drizzle half over vegetables tossing roast for 20 minutes add chickpeas roast for 5 minutes stir parsley into remaining lemon mixture and set aside
- brush lamb with remaining olive oil preheat chargrill to medium high add lamb cook 3 to 4 minutes each side serve with vegetables and drizzle with remaining lemon mixture
