One Pan Roast Lamb


Feed the family with this classic roast lamb dish!

The ingredient of One Pan Roast Lamb

  • 1 4 cup 60ml olive oil
  • 2 tablespoon rosemary leaves
  • 2 garlic cloves crushed
  • 2 5kg coles australian lamb whole leg roast
  • 6 desiree potatoes cut into 1cm slices
  • 2 small fennel quartered
  • 1 bunch baby dutch carrots trimmed scrubbed
  • 1 garlic bulb halved crossways
  • 1 cup 250ml chicken stock
  • 1 4 cup 60ml lemon juice
  • lemon wedges to serve
  • steamed green beans to serve

The Instruction of one pan roast lamb

  • preheat oven to 180c grease a large baking dish with lid
  • combine the oil rosemary and garlic in a shallow glass or ceramic dish season with salt and pepper add lamb and turn to coat use fingers to rub the marinade into the lamb
  • place potato fennel carrot and garlic in prepared dish pour over the stock and lemon juice top with the lamb cover bake for 1 hour 30 mins uncover and bake for a further 1 hour or until golden serve with lemon wedges and green beans
