Homemade Fruit Loaf


This home-style loaf is crammed with delicious fruit flavour.

The ingredient of Homemade Fruit Loaf

  • 7g 1 sachet instant yeast
  • 300mls milk warmed
  • 45g 1 4 cup lightly packed brown sugar
  • 450g 3 cups plain flour
  • 2 tsp mixed spice
  • 170g 1 cup raisins
  • 50g 1 4 cup mixed peel

  • butter to serve

The Instruction of homemade fruit loaf

  • use a fork to whisk together the yeast 60ml 1 4 cup of the milk and 2 tsp of the sugar in a small bowl cover with plastic wrap set aside for 10 minutes or until frothy
  • whisk together flour mixed spice remaining sugar and a pinch of salt in a large bowl make a well in the centre add the yeast mixture and remaining milk use a wooden spoon to mix until dough comes together
  • transfer dough onto a clean work surface knead for 8 minutes or until smooth transfer to a lightly greased bowl cover set aside in a warm spot for 1 hour or until doubled
  • flatten the dough on a work surface sprinkle over the raisins and mixed peel knead until combined shape the dough into a log spray a 10 x 20cm loaf pan with oil place the log into prepared pan cover and set aside for 45 minutes or until dough doubles in size
  • preheat oven to 220 200 fan forced bake loaf for 10 minutes reduce heat to 160 180 fan forced bake for a further 15 minutes or until bread sounds hollow when tapped set aside to cool slightly turn out onto a wire rack brush top with 2 tablespoons of the jam set side to cool
  • serve bread sliced and toasted and topped with butter and jam
