- 1 tablespoon smoked paprika
- 2 teaspoons garlic powder
- 1 teaspoon cracked black pepper
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 4 teaspoon cayenne pepper
- 1 5kg beef short ribs
- 1 tablespoon extra virgin olive oil
- 3 4 cup bourbon
- 1 4 cup brown sugar
- 1 cup beef stock
- 2 red onions unpeeled cut into wedges
- 1 tablespoon small fresh basil leaves
- baked potatoes to serve
- sour cream to serve
- chopped chives to serve
- grilled corn cobs to serve
- softened butter to serve
- ranch coleslaw kit to serve
The Instruction of smoky bourbon beef ribs
- preheat oven to 160c 140c fan forced
- combine paprika garlic powder pepper cumin oregano and cayenne pepper in a bowl season with salt rub mixture all over ribs to coat
- heat oil in a large heavy based flameproof baking dish over medium heat cook beef for 2 minutes each side or until just browned transfer to a plate
- add bourbon to dish cook for 2 minutes or until reduced by half add sugar stock onion and 1 2 cup water bring to a simmer return ribs to dish cover with foil transfer to oven bake for 3 1 2 hours or until beef is almost tender remove foil increase oven temperature to 180c 160c fan forced bake for a further 45 minutes turning ribs halfway through until tender
- transfer ribs to a plate discard onion cover loosely with foil to keep warm place dish over medium heat simmer for 5 minutes or until sauce thickens
- cut beef into individual ribs drizzle with sauce sprinkle with basil leaves serve with potatoes topped with sour cream and chives corn topped with butter and coleslaw
