- 2 3 cup apricot jam
- 1 4 cup brandy
- 150g green beans halved lengthways
- 1 4 cup lemon juice
- 2 tablespoons extra virgin olive oil
- 2 gem lettuce leaves separated
- 1 lebanese cucumber chopped
- 1 avocado thinly sliced
- 1 3 cup skinless hazelnuts toasted chopped
- 1 3 cup golden raisins
- 2 green onions thinly sliced diagonally
- 1 1 2 tablespoons finely chopped fresh dill

- remove lamb from fridge 1 hour before cooking and allow to come to room temperature
- preheat oven to 200c 180c fan forced place onion in base of a large roasting pan pour over 1 cup water place lamb on top
- combine mustard rosemary sauce jam and brandy in a bowl spoon half the brandy mixture over lamb roast spooning over remaining brandy mixture halfway through cooking time for 1 hour to 1 hour 10 minutes for medium or until the lamb is cooked to your liking cover loosely with foil stand for 15 minutes to rest
- meanwhile make hazelnut and golden raisin salad cook beans in a medium saucepan of boiling water for 30 seconds or until just tender refresh under cold running water drain
